They say every gardener comes to loathe zucchini at some point in the season. I don’t loathe it, though! I just… I understand why someone might.
The thing is, even though zukes are not my favorite veggie, they work super well as filler.
My personal favorite recipe is homemade veggie bouillon using those sneaky giant zukes (the ones I have, uh, THREE of), but I also love to shred and freeze it for future orange zucchini bread and muffin quickbread treats.

There’s lots of other recipes I’ve gathered on Pinterest over the course of the year I’d like to try, too, so I’m pleased it can last me all winter.
