Our most successful crop this year, without a doubt, is the radishes! I keep planting them because they are doing so well, but not I have to figure out what to do with them all.

So far, I’ve fermented them for tacos, sliced them fresh for salads, and roasted them with last year’s butternut squash. Oh, and handed them to our neighbor’s three-year-old, who munches on them like they’re apples.

I might try dehydrating or air frying them in super thin slices to make radish chips, and sprinkling them with a little bit rosemary and sea salt.

If we continue to have way too many radishes through the summer, I definitely plan on blanching and freezing a bunch to use throughout the year…
