As I was walking through my garden, I noticed something small and red peeking out of the soil. It was the first radish ready to harvest!
Although I was tempted to snack on it right then and there, I harvested it and washed it off before slicing it up and adding it to a fresh salad.
The crunch of the radish added a nice texture to the salad and the peppery taste was just what it needed. It was the perfect start to my summer harvest.
Once there are more radishes to harvest, I plan on fermenting them for future taco nights!
