A winter harvest

In the gloom and cold, I find myself missing the dirt and the growing things. It took a few tries and a higher-priced starter kit, but I finally figured out how to use microgreens.

Microgreens are super beneficial to the immune system, since they provide a lot of micronutrients and antioxidants. One of the ways I’ve been incorporating them into my daily eating habits is during breakfast — microgreens taste delicious with eggs and I’ve been making these frittatas quite often — highly recommended!

Some other yummy ways I’ve found to use the microgreens include a delicate salad, mixed into fried rice, and blended into homemade pesto for a delectable pasta!
