Simple meals

I’m always looking for ways to use my garden foods in simple, easy ways, because let’s face it–just because I have a ton of produce doesn’t mean I can get around to using it if I have to go through complicated recipes to do so.

This summer, I was really proud of the ways I creatively used up my fresh ingredients, including: breakfast burritos; pasta salads and quick soups; tostados; and toast or a bagel with cream cheese and some kind of veggie. What’s your favorite easy meal?

Lately, not really pictured… I have been on a mega salad kick. My go-to is spinach, shredded carrots, cherry tomatoes, pickled red onions, avocado, banana peppers, diced bell peppers, cucumber, feta cheese, chopped walnuts, and a light balsamic vinaigrette. Chef’s kiss! Add chicken or steak to make it more of a meal, or eggs for vegetarians. Freakin’ yum!
