Chicory is a fantastic plant—it has anti-inflammatory properties and is a common additive to coffee—but my favorite feature is its flowers.
Chicory flowers open in the early morning, ready to greet the sun, but then—like me—they’re ready for a nap by the early afternoon.
Unlike many flowers, each chicory bloom only lasts for one day and then never blooms again.
I managed to snag these while they were still open and hope to make some purple simple syrup with their luscious color.
