The amaranth really took off this year, and I can’t get enough of the vibrant red flowers!
I once wrote a short story about this ancient grain because I was so intrigued by its resilience — flash forward a bit and it’s thriving in my very own garden.
So far I’ve only cultivated it for its striking beauty (I’m going to fashion a decorative harvest bundle for the door with the rich heads), but I would love to learn how to harvest amaranth for food.
Amaranth originated in South America and has several uses and benefits — but really, who knew a whole-grain substitute could be so beautiful!
