Future trees

I was pleased to find two ripe mangoes in the produce box delivery this week, as the fruit recently came up in an episode of something I was watching and I couldn’t stop thinking about it. As usual, J had an excellent idea for how to use them in food: make a sweet mango sticky rice to go with Jamaican-style ribs.

DELICIOUS.

But, not even the most exciting part! I was curious, because now every plant is possible in my head, to see if there was a way to turn the fibrous pit into a tree. Just as a little houseplant… I doubt I can coax it to fruit.

Turns out, yes! I scrubbed the flesh off, let it dry out, then cracked open the husk piece by piece and found THESE CHONKY BEANS. Mind blown.

Now it’s just a matter of letting these sprout in a moist paper towel for a few weeks… I’m excited to see what happens.
